These vibrant pork and kale dumplings offer a fresh, nutritious twist on a classic dim sum favourite. By combining lean minced pork with finely shredded kale, crunchy mangetout and fragrant garlic chives, each parcel is packed with texture and deep savoury flavour. The addition of water chestnuts provides a delicate bite, while ginger and mirin bring a subtle brightness to the protein-rich filling.
Perfect as an impressive starter or a light, high-protein dinner, these steamed dumplings are surprisingly simple to assemble at home using shop-bought wonton wrappers. Steam them gently until tender and serve immediately with a side of spicy chilli sauce and tangy Chinese black vinegar. They make a wonderful communal meal for sharing with friends or a healthy homemade alternative to a weekend takeaway.
Ingredients for Kale, Snow Pea, and Pork Dumplings
2 1/2 cups finely shredded kale leaves
100g snow peas, trimmed and finely chopped
2 tablespoons finely chopped water chestnuts
1/2 cup coriander leaves, chopped
2 tablespoons chopped garlic chives
1 teaspoon finely grated ginger
1 tablespoon mirin (Japanese rice wine)
1 teaspoon sesame oil
150g pork mince
Sea salt and cracked black pepper
30 wonton wrappers
Spring onions, thinly sliced, to serve
Chilli sauce and Chinese black vinegar, to serve
How to make Kale, Snow Pea, and Pork Dumplings
Place the kale, snow pea, water chestnut, coriander, chive, ginger, mirin, oil, pork, salt, and pepper in a large bowl and mix well to combine. Place the wrappers on a clean work surface and brush the edges with water. Place 1 teaspoon of the kale mixture in the centre of each wrapper. Fold the edges of the wrappers over and press together to seal. Place a steamer lined with non-stick baking paper over a saucepan of simmering water. Steam the dumplings, in batches, for 10–12 minutes or until cooked through. Top with the onion and serve with chilli sauce and black vinegar.
