Hush-Up Spicy Gluten-Free Hush Puppies

These spicy gluten-free hush puppies offer a protein-rich twist on a classic Southern snack. By incorporating shredded chicken and sweetcorn into a seasoned cornmeal batter, these golden bites are transformed into a substantial treat that doesn't compromise on flavour. The addition of Cajun spice and a hint of Tabasco provides a gentle heat that perfectly complements the savoury, crisp exterior and light, fluffy middle.

Ideal as a high-protein starter or a festive party snack, this recipe is designed specifically for those following a gluten-free diet. The combination of grated onion and garlic ensures every bite is aromatic, while the diced tomato adds a touch of moisture. Serve them warm from the frying pan with a chilled horseradish sauce for a sophisticated contrast in temperature and spice.

Ingredients for Hush-Up Spicy Gluten-Free Hush Puppies

  • 725ml vegetable oil

  • 475ml cornmeal

  • 240ml Amy’s Gluten-Free Mix

  • 1 teaspoon baking powder

  • 2 tablespoons sugar

  • 100g corn kernels

  • 1 tablespoon Cajun seasoning

  • 1 teaspoon salt

  • 1/2 teaspoons black pepper

  • 1 (275g) can chunk white chicken, shredded

  • 120g grated onion

  • 2 cloves garlic, minced

  • 1 small tomato, diced

  • 2 large eggs

  • 180ml milk

  • 1/4 teaspoons Tabasco sauce

  • Spicy Horseradish Sauce, for serving

Preheat the oil in a deep fryer or Dutch oven to 171°C. Combine all the remaining ingredients and mix until nice and thick. Being very careful so you don’t burn yourself, spoon the puppies into the hot oil, and fry for 4 to 5 minutes, turning the puppies over a few times while they are frying so they are brown on all sides.

Transfer to a paper bag to drain. Serve with Spicy Horseradish Sauce.
