These Niçoise toasts offer a fresh, high-protein twist on the classic French salad, transforming familiar flavours into a satisfying light meal. By combining omega-rich tinned tuna, hard-boiled eggs, and tangy Mediterranean staples like capers and olives, this recipe creates a sophisticated open-faced sandwich. The addition of cottage cheese to the egg base provides a creamy texture and a significant protein boost without the need for heavy mayonnaise, making it a nutritious choice for a post-workout lunch or a quick evening meal.
Perfect for busy weekdays, this versatile dish relies on store-cupboard essentials and fresh spring onions to deliver a vibrant punch of flavour. Serve these rustic toasts on their own or with a crisp green salad for a balanced lunch. The combination of garlicky toasted bread and the bright, zesty tuna topping ensures every bite is full of texture. It is an excellent way to elevate a simple tin of tuna into something truly special.
